Shepherds Pie
This recipe is what could be served on the Ranee Railways in India. Ranee is the fastest train in India and is the "Queen" of travel.
Ingredients
- 1 1 lb bag Frozen Peas and Carrots frozen
- 1 Pint Onion and Tomato Gravy Masala See recipe on this site
- 4 medium White potatoes
- 1 cup Sharp Irish White Cheese shredded
- 1 teaspoon garlic
- 1 teaspoon salt
- 1.5 pounds ground lamb or coarse ground chuck
- 1/4 cup fresh parsley as a garnish
- 1/2 stick butter for the mashed potatoes
Instructions
- cook the lamb or beef, or a combination with a little salt, and drain the fat
- Add the onion-tomato masala gravy and add flour if needed needed to thicken
- transfer the lamb to a baking dish or aluminum tray and let rest or you can let rest in a cast iron skillet that you used to cook it in.
- Make the baked potatoes, then drain mash and add butter
- Add frozen peas and carrots to the top of the lamb mixture. Cover completely
- Fill a plastic bag with the potato mixture and squeeze mashed potatoes onto the top covering all the vegetables
- Cover the mashed potatoes almost completely with the sharp white cheddar cheese.
- Bake at 375 f for 30 minutes or until the potato mixture looks browned
- Remove and let it rest 15 minutes before cutting and serving
